Committed to transparency, collaboration, and the revival of heritage grains for contemporary use, Good Grains works with a network of small-scale farmers certified according to KRAV and EU organic standards, based in Sweden’s Sörmland region, just south of Stockholm.
The wholegrain barley selected for ARKET CAFÉ is prepared using a traditional hydrothermal method involving soaking, heat, and time – supporting the grain’s texture and flavour. This technique has been developed over decades of research and innovation to increase bioavailability of essential minerals such as iron and zinc.
Good Grains ensures a clear chain of origin from farm to bowl, offering ingredients suited to contemporary cooking. Their barley bulgur forms the foundation of our seasonal bowls, reflecting our commitment to quality ingredients, taste and carefully selected suppliers.
